A-maiz-ing Cornbread

  • Ingredients

    2 cups all purpose flour

    1 cup cornmeal

    1 cup sugar

    1 ½ tablespoons baking powder

    1 teaspoon kosher salt

    ½ cup (8 Tbs) butter, melted

    ½ cup oil

    1 ¼ cups milk

    3 large eggs, beaten

    Honey and extra butter for serving, optional

  • Step 1

    Preheat oven to 350°F and place a 10-in cast iron skillet in the oven to heat while you prep ingredients. In a large bowl, whisk together flour, cornmeal, sugar, baking powder, and salt. In a medium bowl, mix together melted butter, oil, milk, and eggs. Add wet ingredients to dry ingredients and mix until combined.

    Carefully transfer your batter to your prepared skillet. Bake for 35-45 minutes until golden and a toothpick inserted in the middle comes out clean.

    Allow to cool for a few minutes in the skillet before cutting into triangles and serving. Serve with butter and honey if desired. Good for up to 3 days in an airtight container. Reheat in oven for 7 minutes for leftovers.
