Epis (Haitian Marinade)
Similar to sofrito, this aromatic green seasoning is a staple in Haitian cuisine. Use it as a seasoning base for any meat, seafood, veggie, rice, stew, etc. for a savory, flavorful, and (a little) spicy punch! This recipe is deeply rooted in tradition and varies!

Ingredients
Onion, 1 medium
Bell peppers, 2 (stems and seeds removed)
Scallions, 2 or 3 (roots removed)
Thyme, small bunch, stems removed
Parsley, 1 medium bunch
Lime, juice of 1 or 2
White vinegar, 1/4 cup
Scotch bonnet or habaneros, 3 (stems removed)
Celery, 2 sticks
Whole head of garlic, cloves peeled
Chicken bouillon cube (optional)
Olive oil, half cup
1 tsp pepper

Instructions
Add all of the ingredients, except the olive oil, into a blender or food processor. Blend until smooth.
Slowly pour olive oil into mixture and blend until incorporated.
Pour into a large jar and refrigerate or freeze in ice cubes/small portions to use in almost any dish!
