Orange Cardamom Cake with Orange Maple Glaze
Ingredients:
Orange simple syrup (optional):
* 1/3 cup water
* 1/3 cup white sugar
* 1/8 tsp salt
* 2 tbsp fresh orange juice
* 2 tsp pure vanilla extract or vanilla paste
Cake:
* 3 cups AP flour
* 1 tsp salt
* 1/4 tsp baking soda
* 1 tsp cardamom
* 2.5 cups granulated sugar
* 2 tbsp orange zest
* 5 eggs
* 2 tsp pure vanilla bean extract or paste
*1 tsp orange extract
* 2 tbs fresh orange juice
* 1 cup buttermilk
* 1 1/4 cups extra virgin olive oil
Maple Cardamom Glaze:
* 2 cups powdered sugar
* 2 tbsp fresh orange juice
* 1 Tbs maple syrup
* 1/8 tsp fine sea salt
* 1/8 tsp cardamom powder
* 1 tbsp water (or more)
Instructions:
Make the Orange Simple Syrup:
1. To a small saucepan, add water, sugar, and salt. Simmer until all of the sugar is dissolved. Remove from the heat.
2. Add vanilla extract, orange juice, and stir to combine.
3. Set aside.
Make the Cake:
1. Pre-heat oven to 325°F.
2. Mix together flour, cardamom, baking soda, and salt in a large mixing bowl. Set aside.
3. In a large bowl, combine the granulated sugar and orange zest. Gently mix the two together for about 3 minutes.
4. Thoroughly combine the orange zest-infused granulated sugar, eggs, vanilla bean paste or extract, orange extract, fresh squeezed orange juice, and buttermilk with a whisk.
5. Add olive oil to liquid mixture and combine with the whisk until thoroughly combined.
6. Add the wet mixture to the dry mixture and whisk until no lumps remain.
7. Using nonstick cooking spray and butter, coat the inside of your pan very well. Add batter to the prepared bundt pan.
8. Bake for 50-70 minutes in a 325°F oven, until a toothpick comes out clean from poking the dense part of the cake.
9. Remove from the oven and allow to cool on rack in its pan for ten minutes. Brush simple syrup on the cake after inverting it onto the cooling rack. Allow the cake to cool completely.
10. After ten minutes, invert the cake onto the cooling rack and gently remove it from the pan.
11. Allow to cool 3-5 hour
Make the Maple Cardamom Orange Glaze:
1. Add powdered sugar, sea salt, cardamom, vanilla extract, maple syrup, and orange juice (or Triple Sec) to a medium mixing bowl. Stir until the mixture is mixed but clumpy. If all of the powdered sugar does not mix in well, add another 1/2 tbsp of orange juice or Triple Sec.
2. Add water to the mixture and stir until smooth.
3. Drizzle over cooled cake and serve.
